Holbeach 18-year-old launches fine dining pop-up restaurant in Sutton Bridge

Bayley Rudkin, an ambitious 18-year-old from Holbeach, is set to bring fine dining to the area. He will launch his pop-up restaurant, The Soleil, offering a countryside dining experience.

The first event will take place on Saturday, January 31, from 6pm to 10pm at the Diamond Hall in the Curlew Centre, Sutton Bridge. Guests can enjoy a curated four-course meal, which includes arrival drinks and canapés.

Mr. Rudkin expressed his dream of opening a restaurant, stating, “This is one step to get there.” He has experience working in clubs and hotels in London and is eager to return to the countryside where he grew up.

At 16, he left home to pursue his culinary dreams, training under a specialized apprenticeship at the Royal Academy of Culinary Arts in London and in Bournemouth. His debut menu will focus on seasonality and affordability.

Mr. Rudkin aims to keep costs low, saying, “I have tried my best to make it as cheap as possible.” The dining experience will be formal, with tables set with water and wine glasses.

He will be supported by five staff members during the event and plans to host similar evenings at various venues in the area. His specialties include canapés and desserts, with carrot cake being a personal favorite.

Mr. Rudkin hopes to establish a business partnership with Sessions House in Spalding. He admires head chef Stephen Carter, who inspired him during his training in London.
